In Campania is one of the ancient recipes with which you laundered stale bread and mozzarella in surplus. Together now, they are one of the most succulent dishes of the cuisine made in Naples . In other regions, are offered variants with the addition of salted anchovies or ham. We recommend at maximum to  add to the recipe that we report , the hanging cherry or grape tomatoes cut into slices and put the center together with Her Majesty the mozzarella .

Ingredients (for 4 people):

8 slices of homemade bread

8 slices of mozzarella

3 eggs

2 dl milk

flour

salt

oil for frying

Making of recipe.

Cut the slices of bread, if you want eliminating the crust. In a baking dish, roll them in flour only from the outside . At the center , put the slices of mozzarella. To prevent that milk mozzarella escape or eliminate, you must have put, cut off for half an hour in the freezer so it dries out , or always to prevent overflows , after spending the slice of bread in flour, only the edge of this , moisten with water . With mozzarella in the center, soak bread in the chest of eggs already beaten and duly salted . Better if they stay for a few minutes in infusion to well absorb into the depth the egg. Prepare a frying pan with hot oil and fry well on both sides. Serve hot with mozzarella that row with every bite , they are a pleasure .
