The recipes of traditional Neapolitan cuisine.

Peppers, their name means “box” and never as in this case meaning haS been more appropriate . In this recipe , they  guard as a treasure,  a nice plate of spaghetti special . For others, however , would lead to the etymology of the verb “to bite ” , perhaps because, for the spicy version , their taste bites the tongue .

Ingredients (for 4 people):

8 large peppers
400 grams spaghetti medium-size
150 gr black olives
1 dl oil
1 garlic
12 anchovies in oil
75g capers
1 bundle parsley

Making of recipe.

Remove the cap of the peppers and remove the seeds , wash and dry . Peel after they are roasted in the oven, without breaking them . Pour into a pan where you browned the ‘ garlic in a deciliter about oil (to be deleted when it is golden ) , and let them cook for a few moments . Then put them aside . In the same pan add the capers and black olives , pitted and made into small pieces. One minute and add the chopped tomatoes . After 10 minutes of cooking the sauce , add the anchovies, salted anchovies. Just a couple of minutes and then turn off and add the chopped parsley. Cooked pasta in a separate pot , drain well, and brown it in the pan of sauce . Well mixed , stuff peppers in the quantities that you most enjoy and good appetite.
